Hugh Baird College’s L20 Hotel School recently welcomed acclaimed chef Aiden Byrne to their L20 Restaurant to work alongside students to produce a dazzling menu for 60 lucky guests.
Kirkby-born chef, Aiden Byrne first came to prominence when he was working at Adlard’s in Norwich, where at the age of 22 he became the youngest ever chef in the UK to win a Michelin star. Following this success, he went on to work at other Michelin-starred restaurants, alongside notable chefs such as Paul Rankin and Tom Aikens, before fully establishing his own identity as Head Chef at The Grill in the Dorchester Hotel in London.
He is now part owner of four restaurants including Restaurant MCR in Manchester and is due to open a new venture in Liverpool this year.
Chef Byrne and his team worked alongside L20 Hotel School students to prepare and serve a five-course menu which included; cured hand dived scallops, wholemeal sourdough with roasted chicken butter, Ribblesdale goats cheese flan, braised beef cheek with 18 year old Secretto ham and to finish, a rhubarb parfait with cardamom and orange.

“What an absolutely fantastic evening. All of the students showed great skill and confidence and I’ve noticed some definite future stars of catering industry. What we’ve done here tonight is a real testament to what L20 Hotel School and Hugh Baird College are achieving – nurturing and developing the next generation of the hospitality workforce. It was a real honour to come and cook here today.”
